About The Amberjack In Key West

There are two species of amberjack found in our waters: the Greater amberjack, which usually get to about 40 lbs and live on reefs and wrecks in anywhere from 60 to 220 feet of water; and the Lesser amberjack, which gets to about 10 lbs and is found in much deeper water, from 150-400 feet.

The Greater amberjack is a sleek, torpedo-shaped fish with a distinctive stripe running from its nose to its dorsal fin. Mature specimens can reach 100 lbs or more, making them a highly sought-after game fish. They like to hide around underwater structures such as reefs, oil rigs, or sea mounts. Both species of amberjack are aggressive feeders, and will take bait with quick, voracious bites.

How We Catch Amberjack In Key West

We have a few favorite places we like to visit offshore that are known amberjack hangouts, but really any underwater structure in anywhere from 40-240 feet of water is a solid bet. We like to cast a line with live baitfish - pinfish, minnows, or bluefish work great - and gradually draw them up from the depths until they take the bait. If they’re not going for it, chumming the water works in a pinch.

Once hooked, amberjacks will fight you for every inch of line, so get ready! But the results are worth it as this fish has a rich, buttery flavor that can be broiled, baked, smoked, grilled, pan-fried…you name it!
